New Face of Eggs

Ingredients:

* Organic Free Range Hard-boiled eggs
* Organic Round crackers (any shape will do but round tends to be the easiest shape)
* Organic Vegetable and herb garnishes
* Organic Cold cuts, organic pepperoni or organic bacon (vegetarian options also)
* Organic or non-dairy cheese (sliced or grated anything that will add some fun)
* Condiments (mustard, mayo, ketchup, Sriracha anything to add the fun)

Directions:

1. Slice hard boiled eggs evenly and thinly.
2. Place the egg slices on crackers
3. Place out the herbs, garnishes, veggies, cheeses, meats or anything else you want to use for decorating.
4. Have fun, be creative and go healthy!

How are these for a super fun snack? Let your kids be creative and healthy while doing it!  Not all children may like eggs so lunch meats can be a great alternative! Allergies are always an issue too but these days there are excellent substitutes. Keeping your children interested in being healthy is a constant challenge so do what you can to keep them having fun with their food.

Ingredients:

1 package croissant rolls (or homemade pastry dough)
1 block Organic cheddar cheese (or your favorite kind of cheese)
1 package Organic turkey pepperoni

Instructions:

1. Unroll all of the crescents, make sure they all croissants are flat and spaced away from each other.
2. Grease a baking sheet.
3. Cut your cheese in thin slices.
4. Place 2 pieces of turkey pepperoni on top of each slice of cheese.
4. Take the turkey and cheese and wrap it in your croissant. Start from either of the ends and roll the bottom up.  Don’t roll your croissants up all the way. Make sure the cheese and pepperoni don’t come out of the roll. Keep a little less than half of the croissant unwrapped and form it in to your hat shape. You can even use a fork or stencil to add detail to your hat.

Keep in mind you can use anything you want. Add cream cheese, ham, lox, onions, asparagus, fruit, peanut butter and chocolate. You can do whatever you want with them. Experiment. If you make this a sweet treat you can use piping to add even more decoration to the hat! Send me pictures of your Halloween Treats and I will post them!

Spinach & Brie Topped Artichoke Hearts

INGREDIENTS:

15 or 20 Organic Artichoke Hearts
2/3 cup Organic Spinach
1 teaspoon Organic Lemon Pepper
1/4 Organic Sea Salt

18 thin slices Brie Cheese
Organic Olive Oil

DIRECTIONS:
1. Start your grill.

2.Prepare artichoke hearts by either steaming or boiling them which ever you prefer.

3. At the same time chop and cook your spinach

4.Combine spinach, lemon pepper and salt in a small bowl. Top each artichoke heart with the spinach mixture and brie.
5. If you have a stone or wood slab to grill on that is great if not you can wrap the hearts in aluminum. Grill until cheese melts, 1 to 2 minutes.

Cheesy Corns!! Yummy Organic Halloween Snack

Ingredients:
2 homemade organic pizza crust or store bought organic pizza crust (size and quantity depending on how many you are feeding or how big you want your pieces)
3 blocks of organic cheese 1 block of yellow cheese, 1 block of white cheese & 1 block of orange cheese.

DIRECTIONS

1. Heat the oven to 450º.
2. Cut pizza crusts into wedges that resemble the shape of candy corn. Top each wedge with rows of white, orange, and yellowish cheeses, as shown.
3. Bake the wedges on a cookie sheet for 8 to 10 minutes, then let them cool for 5 minutes before serving. Makes 16 to 20.
4. You can serve with your favorite dips like guacamole, salsa, sour cream or even put your favorite toppings just for fun.
